Summer finally feels like it’s here and what could be better than a fruity, refreshing cocktail turned into creamy homemade ice cream? The Mai Tai is one of those timeless cocktail classics: fruity, sweet, slightly nutty, and full of vacation vibes.

Had one of those long “meh” days? Then this Mai Tai ice cream made in the Ninja Creami might be exactly what you need. Honestly, the first spoonful alone feels like an instant mood booster. To me, that’s exactly what great ice cream should do bring a little joy and make the day feel better.

The texture turned out incredibly creamy and smooth, almost velvety. The combination of lime juice and almond syrup adds a refreshing citrusy flavor with a subtle nutty depth that works perfectly with the fruity orange and pineapple notes.

If you want to make it a little more like the classic cocktail version, you can always add a splash of rum before the respin for an adults-only twist. And if you prefer keeping things simple, just leave out the almond syrup and you’ll end up with a delicious pineapple orange ice cream instead.

Mai Tai Ice Cream Ninja Creami Recipe

Ingredients
  

  • 2 slices of pineapple approx. 220 g
  • 1 small orange
  • Juice of half a lime
  • 30 ml almond syrup
  • Sugar to taste

Method
 

  1. Place the pineapple, orange and the juice of half a lime into a Ninja Creami container. Blend everything together using a hand blender.
  2. Add the almond syrup, taste and add a little more sugar if needed.
  3. Freeze for at least 24 hours.
  4. Select the sorbet mode.
  5. If the ice cream is still powdery, select the Respin mode again. By the way, if you want to make the ice cream with alcohol, now is the right time to add it.
